Watermelon & Feta Salad

4 oz block feta cheese
1–2 thick round slices watermelon
Sea salt, to taste
Black pepper, to taste
1 tablespoon extra virgin olive oil
2 teaspoons balsamic glaze
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh basil
Directions
- Slice the feta cheese into cubes about 1 to 1½ inches wide and approximately ¾ inch thick.
- Trim the rind from the watermelon and cut the fruit into cubes similar in size to the feta pieces. If needed, slice the cubes horizontally to create evenly sized pieces.
- Arrange the watermelon and feta cubes alternately on a serving platter to create a checkerboard-style pattern.
- Lightly season with sea salt and black pepper.
- Drizzle olive oil and balsamic glaze evenly over the top.
- Finish with chopped mint and basil before serving.
- Serve immediately, or refrigerate up to 1 day before serving.
